The Hmong cattle in Ha Giang are a rare and valuable local breed, raised by the Hmong people on the rocky plateau. They are renowned for their large, strong physique (males can weigh 500-700 kg, resembling wild bulls), sweet, tender, and uniquely flavorful meat, bright red in color, and finely textured due to the unique climate and terrain. They possess high adaptability and good resistance to disease, and are being developed as a national brand, closely linked to the highland culture and tourism development.
- Appearance: Large, strong, and robust; many males resemble wild bulls.
- Meat quality: Tender, sweet, and uniquely flavorful meat, bright red in color, finely textured, naturally sticky, and dry.
- Raising: Raised naturally on rocky mountains, requiring the cattle to climb, resulting in firm meat with a distinctive flavor. Raised according to Hmong tradition, resulting in less inbreeding.
- Geographical conditions: Raised in the highlands of Ha Giang (Dong Van, Meo Vac, Quan Ba, Yen Minh…), where the cool climate and thin air increase hemoglobin content, resulting in redder meat.
