Hmong chicken eggs, also known as green-shelled or black-shelled eggs, are a rare delicacy from the Northwest mountainous region of Vietnam, considered a natural “ginseng” due to their high nutritional value.
Characteristics:
- Hmong chicken eggs typically have a distinctive light green shell, are small in size like regular chicken eggs, and have a very fragrant aroma. They have a larger yolk, the yolk is closer to the egg white, and the shell is thinner than regular chicken eggs.
Nutritional Value:
- They contain three times more DHA than regular chicken eggs.
- They have very low cholesterol, making them suitable for people with diabetes, high blood pressure, high cholesterol, fatty liver disease, and obesity.
